Sourdough bread is a naturally leavened bread made with no dry/commercial yeast; instead, it is made using a “sourdough starter”—a live culture of wild yeast and beneficial bacteria that ferments the dough over a longer period, producing its signature tangy flavor, chewy texture, and thick crust. In our part of the world, we have a major challenge with the flour. That is why this extended fermentation also breaks down proteins and carbohydrates, making the bread more digestible and nutritious. #sourdough
